Its been way too long since I have posted a recipe! I figured it would be good to start off 2016 with a recipe that is healthy delicious and easy. Quinoa is an amazing grain that is highly nutritious. One cup of cooked quinoa has 8 grams of protein and 5 grams of fiber. I also like to add chia seeds to my muffins because they look nice and add nutritional value. All you need for this recipe is a small pot to cook your quinoa, a muffin tin and a blender! Don't forget to cook your quinoa before starting this recipe :)
Quinoa Coconut Muffins (gluten free + dairy free)
- 2 cups COOKED quinoa (about 3/4 cup uncooked quinoa)
- 1/3 cup coconut milk
- 3 eggs
- 1/3 cup melted coconut oil
- 1/4 cup sugar
- 2 tablespoons maple syrup
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon chia seeds
- 1/3 cup shredded unsweetened coconut
- Preheat oven to 350 degrees. Line a muffin tin with paper liners.
- Add all the ingredients EXCEPT for the shredded coconut and chia seeds to a blender.
- Blend until all the ingredients are combined.
- Add the chia seeds and shredded coconut. Stir with a spoon.
- Scoop batter into prepared muffin tins and bake for about 20 minutes until golden.
