Quinoa Coconut Muffins (gluten free + dairy free)


Its been way too long since I have posted a recipe!  I figured it would be good to start off 2016 with a recipe that is healthy delicious and easy. Quinoa is an amazing grain that is highly nutritious.  One cup of cooked quinoa has 8 grams of protein and 5 grams of fiber.  I also like to add chia seeds to my muffins because they look nice and add nutritional value.  All you need for this recipe is a small pot to cook your quinoa, a muffin tin and a blender! Don't forget to cook your quinoa before starting this recipe :)



Quinoa Coconut Muffins (gluten free + dairy free)
  • 2 cups COOKED quinoa (about 3/4 cup uncooked quinoa)
  • 1/3 cup coconut milk
  • 3 eggs
  • 1/3 cup melted coconut oil
  • 1/4 cup sugar
  • 2 tablespoons maple syrup
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon chia seeds
  • 1/3 cup shredded unsweetened coconut

  1. Preheat oven to 350 degrees.  Line a muffin tin with paper liners.
  2. Add all the ingredients EXCEPT for the shredded coconut and chia seeds to a blender.
  3. Blend until all the ingredients are combined.
  4. Add the chia seeds and shredded coconut. Stir with a spoon.
     
  5. Scoop batter into prepared muffin tins and bake for about 20 minutes until golden.
